Description

A rustic Strawberry & Pistachio Galette with flaky golden crust, juicy strawberries, and crunchy pistachios, perfect for any occasion.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar (for dough)
  • 1/3 cup granulated sugar (for filling)
  • 1/4 teaspoon salt
  • 34 tablespoons ice water
  • 2 1/2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon zest
  • 1/3 cup shelled pistachios, chopped
  • 1 egg, beaten
  • 1 tablespoon coarse sugar

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, 1/4 cup sugar, and salt. Cut in butter until crumbly. Add ice water until dough forms. Wrap and chill for 30 minutes.
  3. On a floured surface, roll out dough into a 12-inch circle. Transfer to prepared sheet.
  4. Toss strawberries with 1/3 cup sugar, cornstarch, and lemon zest. Spoon onto dough, leaving a 2-inch border. Sprinkle pistachios on top.
  5. Fold dough edges over filling. Brush with egg wash and sprinkle with coarse sugar.
  6. Bake 35–40 minutes until crust is golden and filling bubbly. Cool slightly before slicing.
  7. Serve warm with ice cream or whipped cream.

  • Chill the dough for best flakiness.
  • Don’t overload with fruit to avoid leakage.
  • Sprinkle extra pistachios for added crunch.
  • Brush the crust with egg wash for a glossy finish.
