A rustic Strawberry & Pistachio Galette with flaky golden crust, juicy strawberries, and crunchy pistachios, perfect for any occasion.

- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar (for dough)
- 1/3 cup granulated sugar (for filling)
- 1/4 teaspoon salt
- 3–4 tablespoons ice water
- 2 1/2 cups fresh strawberries, hulled and sliced
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
- 1/3 cup shelled pistachios, chopped
- 1 egg, beaten
- 1 tablespoon coarse sugar
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, 1/4 cup sugar, and salt. Cut in butter until crumbly. Add ice water until dough forms. Wrap and chill for 30 minutes.
- On a floured surface, roll out dough into a 12-inch circle. Transfer to prepared sheet.
- Toss strawberries with 1/3 cup sugar, cornstarch, and lemon zest. Spoon onto dough, leaving a 2-inch border. Sprinkle pistachios on top.
- Fold dough edges over filling. Brush with egg wash and sprinkle with coarse sugar.
- Bake 35–40 minutes until crust is golden and filling bubbly. Cool slightly before slicing.
- Serve warm with ice cream or whipped cream.
Notes
- Chill the dough for best flakiness.
- Don’t overload with fruit to avoid leakage.
- Sprinkle extra pistachios for added crunch.
- Brush the crust with egg wash for a glossy finish.
