Description

Strawberry Shortcake Cheesecake Rolls are a sweet, creamy dessert featuring a fluffy cake rolled with a luscious cheesecake filling and a strawberry crunch topping for a nostalgic twist.


Ingredients

  • 1 box vanilla or white cake mix (plus ingredients listed on box)
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups whipped topping (Cool Whip or similar)
  • 1 cup strawberry pie filling or strawberry jam
  • 1/2 cup crushed Golden Oreos
  • 1/2 cup freeze-dried strawberries, crushed
  • 2 tbsp butter, melted

Instructions

  1. Prepare the cake mix according to the box instructions, then bake in a parchment-lined jelly roll pan (10×15 inch) at 350°F (175°C) for about 15 minutes or until set.
  2. Once baked, immediately roll the warm cake (with parchment) from short end to short end. Let cool completely.
  3. In a bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in whipped topping.
  4. Carefully unroll the cooled cake and spread an even layer of cheesecake filling over the surface.
  5. Spoon strawberry filling or jam evenly over the cream cheese layer.
  6. Re-roll the cake without parchment and refrigerate for at least 1 hour to set.
  7. In a separate bowl, mix crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter until crumbly.
  8. Once set, frost the outside of the roll with a thin layer of whipped topping or cream cheese frosting and sprinkle with the strawberry crunch topping.
  9. Slice and serve chilled.

Notes

  • Use a clean kitchen towel to help roll the cake if you don’t have parchment paper.
  • Refrigerate the roll overnight for easier slicing and firmer texture.
  • You can use fresh strawberries in place of jam for a fresher taste.
