Description

A comforting and simple vegan one-pot lasagna made with tender pasta, rich tomato sauce, fresh vegetables, and creamy plant-based cheese, all cooked together for an easy and flavorful meal.


Ingredients

  • 9 lasagna sheets
  • 3 cups tomato sauce
  • 2 cups vegetable broth
  • 1 medium zucchini, sliced
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup vegan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Place a large pot over medium heat to warm up.
  2. Add olive oil, chopped onion, and minced garlic, sauté until fragrant and slightly golden.
  3. Pour in tomato sauce and vegetable broth, then stir well to combine.
  4. Break lasagna sheets into pieces and add them to the pot along with zucchini, Italian seasoning, salt, and black pepper. Stir gently.
  5. Cover and let simmer for about 20 minutes, stirring occasionally, until the pasta is tender.
  6. Add fresh spinach and vegan cheese, stir until melted and well combined.
  7. Let sit for a few minutes before serving, then serve warm.

Notes

  • Stir occasionally to prevent the pasta from sticking to the bottom.
  • Add a splash of vegetable broth if the mixture becomes too thick.
  • Let the dish rest before serving to allow it to thicken naturally.
