- 9 lasagna sheets
- 3 cups tomato sauce
- 2 cups vegetable broth
- 1 medium zucchini, sliced
- 2 cups fresh spinach
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup vegan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place a large pot over medium heat to warm up.
- Add olive oil, chopped onion, and minced garlic, sauté until fragrant and slightly golden.
- Pour in tomato sauce and vegetable broth, then stir well to combine.
- Break lasagna sheets into pieces and add them to the pot along with zucchini, Italian seasoning, salt, and black pepper. Stir gently.
- Cover and let simmer for about 20 minutes, stirring occasionally, until the pasta is tender.
- Add fresh spinach and vegan cheese, stir until melted and well combined.
- Let sit for a few minutes before serving, then serve warm.
Notes
- Stir occasionally to prevent the pasta from sticking to the bottom.
- Add a splash of vegetable broth if the mixture becomes too thick.
- Let the dish rest before serving to allow it to thicken naturally.
