- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 tablespoon sesame oil
- 6 oz sashimi-grade tuna or salmon, diced
- 1 avocado, sliced
- 1/4 cup spicy mayo (mayonnaise mixed with sriracha)
- 2 tablespoons soy sauce
- 1 tablespoon chopped green onions
- 1 tablespoon sesame seeds
- Optional: pickled ginger and wasabi for serving
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Cook the rice with water in a rice cooker or pot until tender and sticky.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Transfer cooked rice to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly oil it.
- Press the sushi rice firmly into a greased 8-inch round pan or shape directly on the baking sheet to form a pizza crust about 1/2 inch thick.
- Brush the rice crust lightly with sesame oil.
- Bake for 15–20 minutes or until the bottom is golden and crisp.
- Remove from oven and let cool slightly.
- Top the crispy rice crust with diced tuna or salmon, sliced avocado, a drizzle of spicy mayo, soy sauce, chopped green onions, and sesame seeds.
- Serve immediately with pickled ginger and wasabi on the side.
Notes
- Use sashimi-grade fish for safety and best flavor.
- You can substitute the fish with cooked shrimp, crab meat, or tofu for a vegetarian version.
- Make sure to press the rice firmly to get a crispy crust.
