- 1 cup sushi rice, cooked and seasoned
- 6 oz sushi-grade salmon or tuna, diced
- 1/2 avocado, sliced
- 1/4 cup cucumber, julienned
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon mayonnaise (optional)
- 1 teaspoon sriracha (optional)
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame seeds
- Pickled ginger and wasabi for serving (optional)
Instructions
- Prepare sushi rice according to package instructions and season with rice vinegar. Let cool.
- In a bowl, mix diced fish with soy sauce, sesame oil, and green onions.
- If desired, mix mayonnaise and sriracha to make a spicy mayo sauce.
- Fill each crispy taco shell with a layer of sushi rice.
- Top with the marinated fish, avocado slices, and cucumber.
- Drizzle with spicy mayo if using, and sprinkle with sesame seeds.
- Serve immediately with pickled ginger and wasabi on the side.
