A quick and flavorful rice bowl featuring tender sweet chili glazed chicken thighs, fresh crunchy veggies, and fluffy jasmine rice. Perfect for a weeknight dinner or meal prep favorite.

- 1.5 pounds boneless skinless chicken thighs
- 1/2 cup sweet chili sauce
- 2 tablespoons soy sauce
- 3 cloves garlic, minced
- 2 cups jasmine rice (uncooked)
- 1 cup julienned carrots
- 1 cup thinly sliced cucumber
- 1 cup shredded cabbage or lettuce
- 2 stalks green onions, sliced
- 1 tablespoon vegetable oil
Instructions
- Set a skillet over medium-high heat and cook jasmine rice according to package instructions.
- In a bowl, toss chicken thighs with sweet chili sauce, soy sauce, and garlic.
- Add vegetable oil to hot skillet and cook chicken thighs 4–5 minutes per side until golden and cooked through. Slice after resting.
- Reduce remaining sauce in skillet until thickened, drizzle over chicken.
- In serving bowls, add jasmine rice as base, top with sliced chicken, carrots, cucumber, and cabbage or lettuce.
- Garnish with green onions and serve immediately.
Notes
- Prep toppings while rice and chicken cook to save time.
- Add a splash of lime juice or chopped peanuts for extra brightness and crunch.
- Use tofu instead of chicken for a vegetarian version.
