Description

A quick and flavorful rice bowl featuring tender sweet chili glazed chicken thighs, fresh crunchy veggies, and fluffy jasmine rice. Perfect for a weeknight dinner or meal prep favorite.


Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 cups jasmine rice (uncooked)
  • 1 cup julienned carrots
  • 1 cup thinly sliced cucumber
  • 1 cup shredded cabbage or lettuce
  • 2 stalks green onions, sliced
  • 1 tablespoon vegetable oil

Instructions

  1. Set a skillet over medium-high heat and cook jasmine rice according to package instructions.
  2. In a bowl, toss chicken thighs with sweet chili sauce, soy sauce, and garlic.
  3. Add vegetable oil to hot skillet and cook chicken thighs 4–5 minutes per side until golden and cooked through. Slice after resting.
  4. Reduce remaining sauce in skillet until thickened, drizzle over chicken.
  5. In serving bowls, add jasmine rice as base, top with sliced chicken, carrots, cucumber, and cabbage or lettuce.
  6. Garnish with green onions and serve immediately.

Notes

  • Prep toppings while rice and chicken cook to save time.
  • Add a splash of lime juice or chopped peanuts for extra brightness and crunch.
  • Use tofu instead of chicken for a vegetarian version.
