Soft on the inside, golden on the outside, these Sweet Potato & Cranberry Bites are the perfect sweet-savory snack or appetizer. Made with wholesome ingredients like mashed sweet potatoes, oats, and cranberries, they’re warm, flavorful, and incredibly easy to make.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1/2 cup dried cranberries
  • 3/4 cup rolled oats
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together mashed sweet potatoes, cranberries, oats, maple syrup, cinnamon, salt, and olive oil until fully combined.
  3. Using a spoon or cookie scoop, form the mixture into small bite-sized balls.
  4. Place the bites onto the prepared baking sheet, spacing them slightly apart.
  5. Bake for 18 to 22 minutes, or until lightly golden and firm on the edges.
  6. Allow to cool slightly before serving.

Notes

  • Chill the mixture for 15 minutes before shaping if it’s too soft.
  • Use parchment paper to prevent sticking and make cleanup easier.
  • Add chopped nuts for extra texture and flavor.
