- 2 cups mashed sweet potatoes
- 1/2 cup dried cranberries
- 3/4 cup rolled oats
- 2 tablespoons maple syrup
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together mashed sweet potatoes, cranberries, oats, maple syrup, cinnamon, salt, and olive oil until fully combined.
- Using a spoon or cookie scoop, form the mixture into small bite-sized balls.
- Place the bites onto the prepared baking sheet, spacing them slightly apart.
- Bake for 18 to 22 minutes, or until lightly golden and firm on the edges.
- Allow to cool slightly before serving.
Notes
- Chill the mixture for 15 minutes before shaping if it’s too soft.
- Use parchment paper to prevent sticking and make cleanup easier.
- Add chopped nuts for extra texture and flavor.
