- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 2 tablespoons granulated sugar
- 2 cups mashed sweet potatoes (cooked and peeled)
- 3/4 cup brown sugar
- 1/2 cup milk (or evaporated milk)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/4 teaspoon ground ginger (optional)
- Whipped cream (optional, for serving)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press the mixture evenly into the bottom of the prepared pan to form the crust.
- Bake the crust for 10 minutes, then set aside to cool slightly.
- In a large bowl, combine mashed sweet potatoes, brown sugar, milk, eggs, vanilla, cinnamon, nutmeg, salt, and ginger. Mix until smooth.
- Pour the filling over the baked crust and spread evenly.
- Bake for 40–45 minutes or until the center is set and a toothpick inserted comes out clean.
- Cool completely in the pan, then refrigerate for at least 2 hours before slicing into bars.
- Top with whipped cream if desired and serve chilled.
Notes
- Use canned sweet potatoes for convenience, but fresh ones offer better flavor.
- Make ahead and store in the fridge for up to 4 days.
- Can be frozen for up to 2 months; thaw in fridge overnight before serving.
