This Sweet & Tangy Peach Salad Dressing is a fresh, fruity blend of ripe peaches, vinegar, and honey with a hint of mustard for balance. It’s light, creamy, and perfect for drizzling over greens, grilled meats, or even as a marinade.

- 2 ripe peaches, peeled and chopped
- 1/4 cup apple cider vinegar
- 2 tbsp honey (or maple syrup)
- 1 tsp Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 tbsp lemon juice (optional, for extra brightness)
Instructions
- Place the chopped peaches, vinegar, honey, mustard, and lemon juice (if using) into a blender or food processor.
- Blend until smooth.
- While blending, slowly drizzle in the olive oil to emulsify the dressing.
- Season with salt and pepper to taste.
- Refrigerate for at least 15 minutes before serving to allow flavors to meld.
