Description

Taco Soup is a hearty, flavorful dish packed with ground beef, beans, corn, tomatoes, and taco seasonings — a one-pot comfort meal that’s quick to prepare and perfect for weeknights.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 packet taco seasoning (or homemade equivalent)
  • 1/2 teaspoon chili powder (optional for extra heat)
  • 2 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, tortilla chips, chopped green onions, avocado

Instructions

  1. In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until the meat is browned and the onion is soft. Drain excess fat if needed.
  2. Add minced garlic and cook for 1 more minute until fragrant.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, chili powder, and broth.
  4. Bring the soup to a boil, then reduce heat and simmer for 20–25 minutes to allow the flavors to blend.
  5. Season with salt and pepper to taste.
  6. Serve hot with your choice of toppings like shredded cheese, sour cream, tortilla chips, or avocado.

Notes

  • This soup freezes well — make a double batch and save some for later.
  • Make it vegetarian by skipping the meat and using vegetable broth.
