- 1 lb ground beef or ground turkey
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 packet taco seasoning (or homemade equivalent)
- 1/2 teaspoon chili powder (optional for extra heat)
- 2 cups beef or chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, tortilla chips, chopped green onions, avocado
Instructions
- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until the meat is browned and the onion is soft. Drain excess fat if needed.
- Add minced garlic and cook for 1 more minute until fragrant.
- Stir in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, chili powder, and broth.
- Bring the soup to a boil, then reduce heat and simmer for 20–25 minutes to allow the flavors to blend.
- Season with salt and pepper to taste.
- Serve hot with your choice of toppings like shredded cheese, sour cream, tortilla chips, or avocado.
Notes
- This soup freezes well — make a double batch and save some for later.
- Make it vegetarian by skipping the meat and using vegetable broth.
- Adjust spice level by adding jalapeños or extra chili powder.
