Description

A flavorful fusion of classic comfort and taco night, this Taco Spiced Beef Meatloaf combines juicy beef, zesty seasoning, melted cheese, and salsa for a tender, crowd-pleasing dinner.


Ingredients

  • 2 pounds ground beef
  • 3 tablespoons taco seasoning
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a large bowl, gently mix ground beef, taco seasoning, breadcrumbs, eggs, milk, onion, garlic, cheese, and cilantro until just combined.
  3. Transfer the mixture to the loaf pan, shaping it evenly.
  4. Spread salsa evenly across the top.
  5. Bake for 50–60 minutes until the internal temperature reaches 160°F (71°C).
  6. Remove from the oven and let rest for 10 minutes.
  7. Slice and serve with extra salsa or sour cream.
