Description

A cozy, saucy enchirito made with seasoned ground beef, creamy refried beans, diced onion, red enchilada sauce, and melted cheddar cheese, all wrapped in soft flour tortillas for a comforting homemade dinner.

  • 1 pound lean ground beef
  • 1 ounce taco seasoning mix
  • 1/4 cup water
  • 15 ounces red enchilada sauce
  • 15 ounces refried beans
  • 6 large flour tortillas
  • 1 small white onion, finely diced
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Heat a large skillet over medium heat. Add the lean ground beef and cook until browned, breaking it into crumbles. Drain excess grease.
  2. Stir in the taco seasoning mix and 1/4 cup water. Simmer for a few minutes until the beef is evenly coated and flavorful.
  3. Warm the red enchilada sauce in a medium saucepan over medium-low heat.
  4. Warm the refried beans in a microwave-safe bowl until smooth and spreadable.
  5. Warm the flour tortillas briefly so they are soft and easy to roll.
  6. Spread a portion of the refried beans down the center of each tortilla. Top with seasoned beef and a sprinkle of finely diced white onion.
  7. Roll each tortilla burrito-style and place seam-side down on a plate or in a serving dish.
  8. Spoon the warm red enchilada sauce over the top of each rolled tortilla.
  9. Sprinkle shredded cheddar cheese over the sauce and serve immediately while hot and melty.
