Description

A juicy, spice-kissed smash burger tucked into buttery, flaky paratha with creamy garlic mayo, a kick of hot sauce, and crisp veggies for the ultimate Dubai street-food experience.


Ingredients

  • Ground beef 80/20: 500 g
  • Parathas: 4, cooked until golden
  • Onion: 1 small, thinly sliced
  • Tomato: 1 medium, sliced
  • Lettuce: 4 leaves
  • Cheddar cheese: 4 slices
  • Garlic mayo: 4 tbsp
  • Hot sauce: 2 tbsp
  • Butter or ghee: 2 tbsp for frying
  • Salt: 1 tsp, divided
  • Black pepper: 1/2 tsp, divided
  • Pickles: 8 to 12 slices, optional

Instructions

  1. Preheat a cast iron skillet or griddle over high heat until very hot.
  2. Season the ground beef with 3/4 tsp salt and 1/2 tsp black pepper, then divide into 4 equal 125 g balls.
  3. Warm a separate skillet over medium heat, add 1 tbsp butter or ghee, and cook parathas one at a time until crisp and golden on both sides. Keep warm under a clean towel.
  4. Add the beef balls to the hot griddle and immediately smash thin with a sturdy spatula or burger press. Sprinkle the remaining 1/4 tsp salt over the patties.
  5. Cook without moving until deeply browned at the edges, about 1 to 2 minutes, then flip. Top each patty with a slice of cheddar and cook 30 to 60 seconds more until the cheese melts.
  6. Spread garlic mayo and hot sauce on each warm paratha, then layer lettuce, tomato, onion, and pickles if using.
  7. Place a cheesy smash patty on each paratha, fold or sandwich, press gently to set, and serve immediately.

Notes

  • For extra crisp edges, smash quickly in the first 10 seconds of contact with the griddle.
  • Keep parathas wrapped in a towel so they stay warm and pliable.
  • If making ahead, refrigerate formed beef balls up to 24 hours and cook to order.
  • Adjust heat as needed to maintain a vigorous sizzle without burning.
