Description

The King’s Banana Nut Crunch is a decadent and hearty baked oatmeal dish inspired by Elvis Presley’s love for bananas and peanut butter. Packed with crunchy nuts, sweet bananas, and a hint of cinnamon, it’s a comforting breakfast or brunch treat.


Ingredients

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 1/2 cups milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • Optional: banana slices and extra nuts for topping

Instructions

  1. Preheat oven to 180°C (350°F). Grease an 8×8-inch baking dish.
  2. In a large bowl, mash the bananas. Add the peanut butter, honey, milk, vanilla, and egg. Mix until smooth.
  3. Stir in the oats, cinnamon, salt, and baking powder. Fold in the chopped nuts.
  4. Pour mixture into the prepared dish and spread evenly. Top with banana slices and extra nuts if desired.
  5. Bake for 30–35 minutes, or until the top is golden and the center is set.
  6. Let cool slightly before serving. Can be served warm or at room temperature.

Notes

  • Use almond butter or sunflower seed butter for a peanut-free version.
