Description

A comforting and sweet dessert made with ripe blackberries and a buttery, biscuit-like topping. The Pioneer Woman’s Blackberry Cobbler is perfect for summer gatherings or as a cozy treat on any day.


Ingredients

  • 4 cups fresh or frozen blackberries
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup milk
  • Vanilla ice cream or whipped cream (optional, for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish or a similar-sized casserole dish.
  2. In a bowl, combine the blackberries, 1 cup of sugar, lemon juice, and vanilla extract. Stir gently to coat the berries and let them sit for about 10 minutes to release their juices.
  3. In a separate large bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar.
  4. Cut the cold butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir just until the dough comes together. It will be a bit thick and sticky.
  6. Spread the blackberry mixture into the prepared baking dish, then drop spoonfuls of the biscuit dough over the top of the berries, covering as much of the surface as possible.
  7. Bake for 45-50 minutes, or until the topping is golden brown and the berries are bubbling around the edges.
  8. Let the cobbler cool for a few minutes before serving. Serve with vanilla ice cream or whipped cream, if desired.

Notes

  • For an extra burst of flavor, you can add a pinch of cinnamon or nutmeg to the blackberry filling.
  • If using frozen blackberries, there’s no need to thaw them before using in the cobbler.
  • This cobbler is best served warm, but it can be stored in an airtight container for up to 2 days at room temperature.
