Description

Golden, crispy, and packed with zesty flavor, these grilled halloumi skewers are a quick and satisfying Mediterranean-inspired dish perfect for any occasion.


Ingredients

  • 400g halloumi cheese, cut into cubes
  • 3 tablespoons olive oil
  • Zest and juice of 1 large lemon
  • 2 cloves garlic, minced
  • 2 teaspoons fresh thyme, chopped
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked if wooden

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. In a bowl, mix olive oil, lemon zest, lemon juice, garlic, thyme, and black pepper.
  3. Lightly oil your grill or pan to prevent sticking.
  4. Thread halloumi cubes onto skewers and brush with the marinade. Let sit for 10 minutes if possible.
  5. Grill skewers for 2–3 minutes on each side until golden and slightly charred.
  6. Brush with remaining marinade or a fresh squeeze of lemon before serving.

Notes

  • Dry the halloumi before marinating to get a better sear.
