- 400g halloumi cheese, cut into cubes
- 3 tablespoons olive oil
- Zest and juice of 1 large lemon
- 2 cloves garlic, minced
- 2 teaspoons fresh thyme, chopped
- 1/2 teaspoon black pepper
- Wooden skewers, soaked if wooden
Instructions
- Preheat grill or grill pan to medium-high heat.
- In a bowl, mix olive oil, lemon zest, lemon juice, garlic, thyme, and black pepper.
- Lightly oil your grill or pan to prevent sticking.
- Thread halloumi cubes onto skewers and brush with the marinade. Let sit for 10 minutes if possible.
- Grill skewers for 2–3 minutes on each side until golden and slightly charred.
- Brush with remaining marinade or a fresh squeeze of lemon before serving.
Notes
- Dry the halloumi before marinating to get a better sear.
- Use fresh herbs when possible for the best flavor.
