Ingredients

- 1 block (14 oz) firm tofu, drained and crumbled
- 1/2 tbsp olive oil
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 tsp turmeric
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp nutritional yeast (optional)
- 2 English muffins or sandwich buns, toasted
- 1 avocado, sliced
- 1 tomato, sliced
- Handful of fresh spinach
Instructions
- Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper and sauté for 3–4 minutes until softened.
- Add the crumbled tofu to the skillet. Cook for 5–6 minutes, stirring occasionally, until it begins to brown slightly.
- Sprinkle in the turmeric, garlic powder, salt, pepper, and nutritional yeast if using. Mix well and cook for another 2 minutes to blend the flavors.
- Toast the English muffins or sandwich buns.
- Assemble the sandwiches by layering tofu scramble, spinach, tomato slices, and avocado on the toasted buns.
- Serve warm and enjoy!
