Description

A hearty and protein-packed vegan breakfast sandwich featuring a flavorful tofu scramble, perfect for starting your day with energy and satisfaction.


Ingredients

  • 1 block (14 oz) firm tofu, drained and crumbled
  • 1/2 tbsp olive oil
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 tsp turmeric
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp nutritional yeast (optional)
  • 2 English muffins or sandwich buns, toasted
  • 1 avocado, sliced
  • 1 tomato, sliced
  • Handful of fresh spinach

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and bell pepper and sauté for 3–4 minutes until softened.
  2. Add the crumbled tofu to the skillet. Cook for 5–6 minutes, stirring occasionally, until it begins to brown slightly.
  3. Sprinkle in the turmeric, garlic powder, salt, pepper, and nutritional yeast if using. Mix well and cook for another 2 minutes to blend the flavors.
  4. Toast the English muffins or sandwich buns.
  5. Assemble the sandwiches by layering tofu scramble, spinach, tomato slices, and avocado on the toasted buns.
  6. Serve warm and enjoy!
