- 1 cup fresh basil leaves, packed
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup heavy cream
Instructions
- Heat a large pot over medium heat and add the olive oil.
- Add chopped onions and garlic. Sauté for 5 minutes until soft and fragrant.
- Add chopped tomatoes, salt, pepper, and broth. Stir to combine.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes.
- Remove from heat and stir in fresh basil.
- Blend the soup until smooth using a blender or immersion blender.
- Return to pot, stir in the heavy cream, and simmer for another 5 minutes.
- Ladle into bowls, garnish with extra basil or cream if desired, and serve hot.
