Ingredients

  • 2 pounds fresh tomatoes, chopped
  • 1 cup fresh basil leaves, packed
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup heavy cream

Instructions

  1. Heat a large pot over medium heat and add the olive oil.
  2. Add chopped onions and garlic. Sauté for 5 minutes until soft and fragrant.
  3. Add chopped tomatoes, salt, pepper, and broth. Stir to combine.
  4. Bring to a gentle boil, then reduce heat and simmer uncovered for 25 minutes.
  5. Remove from heat and stir in fresh basil.
  6. Blend the soup until smooth using a blender or immersion blender.
  7. Return to pot, stir in the heavy cream, and simmer for another 5 minutes.
  8. Ladle into bowls, garnish with extra basil or cream if desired, and serve hot.

Notes

  • For a spicier version, add red pepper flakes during the sauté step.
  • Use high-quality canned tomatoes if fresh are out of season.
  • To make it vegan, substitute the cream with coconut milk or a plant-based cream.
