Description

Silky, savory turkey gravy made from pan drippings, butter, and stock, thickened to a velvety finish. Perfect for Thanksgiving, holiday meals, and everyday comfort dishes.

Ingredients

Scale
  • 1/2 cup pan drippings
  • 2 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 to 4 cups warm turkey or chicken stock
  • Salt, to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme or sage, optional

Instructions

  1. Preheat Your Equipment: Place a large saucepan over medium heat and have a whisk ready.
  2. Combine Ingredients: Add the butter and pan drippings to the saucepan and let them melt together, stirring to combine.
  3. Prepare Your Cooking Vessel: Sprinkle in the flour and whisk constantly until a smooth roux forms and turns lightly golden, about 1 to 2 minutes.
  4. Assemble the Dish: Slowly pour in warm stock in a thin stream while whisking constantly to prevent lumps and create a smooth sauce.
  5. Cook to Perfection: Bring the mixture to a gentle simmer and cook for 8 to 10 minutes until the gravy thickens and flavors meld, stirring frequently.
  6. Finishing Touches: Season with salt, black pepper, and fresh herbs if using. Adjust consistency with additional stock if needed and finish with a small knob of butter for extra shine.
  7. Serve and Enjoy: Strain if desired for extra smoothness, then ladle hot over turkey, mashed potatoes, stuffing, or biscuits and serve immediately.

Notes

  • Skim excess fat from the drippings before starting to avoid a greasy gravy.
  • Warm the stock before adding to the roux to ensure a lump-free gravy.
  • If gravy becomes too thick after resting, whisk in a splash of warm stock to loosen it.
