This creamy Tuscan Salmon with Spinach and Tomatoes is a one-pan wonder featuring seared salmon fillets in a garlic parmesan sauce with wilted spinach and juicy cherry tomatoes. Perfect for weeknights yet elegant enough for guests.

- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 ½ cups cherry tomatoes, halved
- 3 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season salmon fillets with salt and pepper, then sear in the skillet for 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Lower heat to medium and sauté garlic for 1 minute until fragrant.
- Add cherry tomatoes and cook until they begin to blister.
- Pour in heavy cream, stir in parmesan cheese and Italian seasoning, and let simmer for 2–3 minutes.
- Add spinach and cook until just wilted.
- Return salmon to the skillet, spoon sauce over the fillets, and simmer for another 2 minutes.
- Serve hot with your favorite sides.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Don’t overcook the salmon to keep it tender.
- Serve with pasta, rice, or bread to soak up the sauce.
- Add red pepper flakes if you like a bit of heat.
