Description

These ultra crispy baked potato wedges are golden and crunchy on the outside, fluffy on the inside, and perfectly seasoned with herbs and spices. A healthier alternative to deep-fried fries, perfect as a side or snack!


Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons finely chopped fresh parsley (optional, for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Scrub the potatoes well, then cut each into 8 wedges. Soak the wedges in cold water for at least 30 minutes to remove excess starch (this step helps them get extra crispy).
  3. Drain and pat the wedges dry thoroughly with a clean towel.
  4. In a large bowl, toss the wedges with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
  5. Spread the wedges out in a single layer on the prepared baking sheet, cut side down. Do not overcrowd.
  6. Bake for 20 minutes, then flip the wedges and bake for another 15–20 minutes or until golden and crispy.
  7. Remove from oven and sprinkle with fresh parsley and Parmesan cheese if desired. Serve hot with your favorite dipping sauce.

Notes

  • Soaking the potatoes in cold water is key for extra crispiness—don’t skip it!
  • Use parchment paper or a silicone baking mat to prevent sticking and ensure even browning.
  • Serve with ketchup, aioli, or ranch dressing for extra flavor.
