- 4 large russet potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons finely chopped fresh parsley (optional, for garnish)
- Grated Parmesan cheese (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
- Scrub the potatoes well, then cut each into 8 wedges. Soak the wedges in cold water for at least 30 minutes to remove excess starch (this step helps them get extra crispy).
- Drain and pat the wedges dry thoroughly with a clean towel.
- In a large bowl, toss the wedges with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
- Spread the wedges out in a single layer on the prepared baking sheet, cut side down. Do not overcrowd.
- Bake for 20 minutes, then flip the wedges and bake for another 15–20 minutes or until golden and crispy.
- Remove from oven and sprinkle with fresh parsley and Parmesan cheese if desired. Serve hot with your favorite dipping sauce.

- Soaking the potatoes in cold water is key for extra crispiness—don’t skip it!
- Use parchment paper or a silicone baking mat to prevent sticking and ensure even browning.
- Serve with ketchup, aioli, or ranch dressing for extra flavor.
