Description

A comforting one-skillet dish filled with ground beef, bell peppers, rice, and tomatoes that delivers all the flavor of traditional stuffed peppers without the fuss.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 bell peppers (red, green, yellow), chopped
  • 1 can (15 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 cup uncooked white rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in diced onions and garlic and sauté until fragrant.
  4. Add chopped bell peppers and cook for 5 minutes until slightly softened.
  5. Mix in crushed tomatoes, tomato paste, beef broth, and uncooked rice. Stir well.
  6. Season with Italian seasoning, salt, and pepper.
  7. Cover and simmer on low for 20–25 minutes, stirring occasionally, until rice is tender and most liquid is absorbed.
  8. Remove from heat, fluff gently, and garnish with fresh parsley.
  9. Serve hot and enjoy.

Notes

  • Use leftover cooked rice to reduce simmering time.
  • Add red pepper flakes for a spicier version.
  • Replace beef with ground turkey or a plant-based option for a lighter or vegetarian twist.
