- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 3 bell peppers (red, green, yellow), chopped
- 1 can (15 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 cup uncooked white rice
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart as it cooks.
- Stir in diced onions and garlic and sauté until fragrant.
- Add chopped bell peppers and cook for 5 minutes until slightly softened.
- Mix in crushed tomatoes, tomato paste, beef broth, and uncooked rice. Stir well.
- Season with Italian seasoning, salt, and pepper.
- Cover and simmer on low for 20–25 minutes, stirring occasionally, until rice is tender and most liquid is absorbed.
- Remove from heat, fluff gently, and garnish with fresh parsley.
- Serve hot and enjoy.
Notes
- Use leftover cooked rice to reduce simmering time.
- Add red pepper flakes for a spicier version.
- Replace beef with ground turkey or a plant-based option for a lighter or vegetarian twist.
