Ingredients
Scale
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 2 tablespoons granulated sugar
- 2 cups buttermilk
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup unsalted butter, melted
- Maple syrup, for serving
Instructions
- Preheat your non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and sugar.
- In another bowl, whisk the eggs, buttermilk, vanilla extract, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Let the batter rest for 10 minutes.
- Scoop about 1/4 cup of batter onto the hot skillet for each pancake. Leave space between them.
- Cook for 2–3 minutes until bubbles form and edges set. Flip and cook 1–2 minutes until golden brown.
- Transfer cooked pancakes to a plate and keep warm while repeating with remaining batter.
- Serve hot with maple syrup, butter, and optional toppings like fruit or whipped cream.
Notes
- Do not overmix the batter to keep the pancakes fluffy.
- Resting the batter helps the flour absorb the liquids fully.
- Keep cooked pancakes warm in a 200°F oven until ready to serve.
- Double the batch and freeze extras for easy reheating later.
