Description

A cozy, wholesome breakfast dish made with rolled oats, bananas, berries, and crunchy walnuts. Naturally sweetened and 100% vegan, this baked oatmeal is perfect for meal prep or a slow weekend morning.


Ingredients

  • 2 cups rolled oats
  • 1 ¾ cups almond milk
  • 2 ripe bananas, mashed
  • ¼ cup maple syrup
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen mixed berries
  • ½ cup chopped walnuts
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish.
  2. In a large bowl, mash the bananas. Add almond milk, maple syrup, chia seeds, vanilla, and cinnamon. Let sit for 5 minutes.
  3. Add the oats and baking powder to the wet mixture. Stir until combined.
  4. Gently fold in berries and walnuts. Pour mixture into prepared baking dish and spread evenly.
  5. Bake for 35 to 40 minutes, until the top is golden and center is set.
  6. Let cool for 10 minutes before slicing. Serve warm with your favorite toppings.

Notes

  • Use very ripe bananas for the best natural sweetness.
  • Frozen berries can be used without thawing.
  • Store leftovers in the fridge for up to 5 days or freeze in portions.
