Description

Tender venison chunks grilled on skewers and glazed with a sweet and spicy raspberry habanero sauce. A bold and flavorful dish perfect for BBQs or adventurous weeknight dinners.


Ingredients

  • 1.5 lbs venison loin or steak, cut into 1.5-inch cubes
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Wooden or metal skewers
  • 1/2 cup raspberry preserves
  • 12 habanero peppers, finely minced (adjust to heat preference)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon cornstarch + 1 tablespoon water (optional, for thickening)

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a bowl, toss venison cubes with olive oil, salt, pepper, garlic powder, and smoked paprika. Let marinate for 15–30 minutes.
  3. Meanwhile, in a small saucepan, combine raspberry preserves, minced habaneros, apple cider vinegar, soy sauce, and honey. Simmer over medium heat for 5–7 minutes.
  4. If a thicker glaze is desired, stir in cornstarch slurry and simmer for another 1–2 minutes until thickened. Set aside to cool slightly.
  5. Thread the marinated venison onto skewers.
  6. Preheat grill to medium-high heat. Grill venison skewers for about 8–10 minutes, turning occasionally, until nicely charred and cooked to medium-rare or desired doneness.
  7. During the last few minutes of grilling, brush the skewers with the raspberry habanero glaze.
  8. Remove from grill and drizzle with additional glaze before serving.

Notes

  • Use gloves when handling habaneros to avoid irritation.
  • You can substitute raspberry preserves with a mix of fresh raspberries and sugar if preferred.
  • Pairs well with grilled vegetables or a wild rice pilaf.
  • Can also be cooked under the broiler if a grill is not available.
