Description

Tender, juicy chuck roast slow-cooked with bold spices, shredded, and served in crispy tortillas—these viral tacos are packed with flavor and perfect for any taco night.


Ingredients

  • 3 lbs chuck roast
  • 1 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 cup beef broth
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes with green chiles (e.g., Rotel)
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • Corn or flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: chopped cilantro, diced onions, lime wedges, sour cream, avocado

Instructions

  1. Season the chuck roast on all sides with salt, pepper, and taco seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned (about 3–4 minutes per side).
  3. Place the roast in a slow cooker. Add the beef broth, diced onion, garlic, diced tomatoes with green chiles, tomato paste, paprika, and cumin.
  4. Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is fork-tender and shreds easily.
  5. Remove the roast and shred with two forks. Return the shredded meat to the slow cooker and mix with the juices.
  6. Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with cheese, and add a generous portion of the shredded beef. Fold and cook until crispy and golden on both sides.
  7. Repeat with remaining tortillas and beef. Serve hot with your choice of toppings.

Notes

  • To make it spicier, add chipotle peppers in adobo sauce to the slow cooker.
  • Leftover meat can be used for burritos, nachos, or quesadillas.
  • For extra crispy tacos, brush tortillas with a bit of the beef juice before pan-frying.
