- 3 lbs chuck roast
- 1 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp homemade blend)
- 1 cup beef broth
- 1 small onion, diced
- 4 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chiles (e.g., Rotel)
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- Corn or flour tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: chopped cilantro, diced onions, lime wedges, sour cream, avocado
Instructions
- Season the chuck roast on all sides with salt, pepper, and taco seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned (about 3–4 minutes per side).
- Place the roast in a slow cooker. Add the beef broth, diced onion, garlic, diced tomatoes with green chiles, tomato paste, paprika, and cumin.
- Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is fork-tender and shreds easily.
- Remove the roast and shred with two forks. Return the shredded meat to the slow cooker and mix with the juices.
- Heat a skillet over medium heat. Place a tortilla in the skillet, sprinkle with cheese, and add a generous portion of the shredded beef. Fold and cook until crispy and golden on both sides.
- Repeat with remaining tortillas and beef. Serve hot with your choice of toppings.
Notes
- To make it spicier, add chipotle peppers in adobo sauce to the slow cooker.
- Leftover meat can be used for burritos, nachos, or quesadillas.
- For extra crispy tacos, brush tortillas with a bit of the beef juice before pan-frying.
