Description

A vibrant and luxurious toast layered with whipped ricotta, buttery avocado, and a sweet berry compote, topped with coconut flakes and lemon zest for the perfect balance of creamy, crunchy, and fruity flavors.


Ingredients

  • 2 slices multigrain bread, toasted
  • 1/2 cup ricotta cheese, whipped
  • 1 ripe avocado, mashed
  • 2 tablespoons berry compote
  • 68 fresh blueberries, halved
  • 1 tablespoon unsweetened coconut flakes
  • 1 teaspoon lemon zest
  • Pinch of flaky sea salt

Instructions

  1. Toast the multigrain bread until golden and crisp.
  2. Whip the ricotta cheese in a bowl with a splash of lemon juice until smooth and airy.
  3. Mash the ripe avocado with a fork in a separate bowl.
  4. Warm the berry compote gently in a saucepan over low heat for 2–3 minutes.
  5. Spread the whipped ricotta over the toasted bread slices.
  6. Add a generous layer of mashed avocado on top of the ricotta.
  7. Spoon the warm berry compote over the avocado.
  8. Top with halved blueberries, sprinkle with coconut flakes and lemon zest.
  9. Add a pinch of sea salt, serve immediately and enjoy.

  • Use a microplane for finely grated zest for better flavor distribution.
