- 4 thick slices crusty bread (sourdough or ciabatta)
- 4 slices mozzarella cheese
- 1 large tomato, sliced
- 1 cup lettuce or arugula
- 2 tablespoons mayonnaise or pesto

Instructions
- Heat a grill pan or skillet over medium-high heat.
- Brush zucchini slices with olive oil and season with salt and pepper.
- Grill zucchini in a single layer for 2–3 minutes per side until tender and marked.
- Toast bread slices lightly on both sides.
- Spread mayo or pesto on one side of each slice.
- Layer grilled zucchini, cheese, tomato, onion (if using), and greens onto bread.
- Press sandwich on grill pan until cheese melts and bread crisps.
- Let rest for a minute, then slice and serve warm.
Notes
- Salt zucchini before grilling to reduce moisture.
