Soft and chewy ube marble cookies with buttery vanilla dough swirled together with sweet purple ube for a beautiful bakery-style treat ready in just 30 minutes.

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/3 cup ube halaya
- 1 teaspoon ube extract
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whisk together flour, baking soda, and salt in a bowl.
- In another bowl, cream butter, granulated sugar, and brown sugar until fluffy.
- Mix in egg and vanilla extract until smooth.
- Divide dough in half and mix ube halaya and ube extract into one portion.
- Gently swirl vanilla dough and ube dough together without fully mixing.
- Scoop dough onto prepared baking sheet and top with white chocolate chips if desired.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm and enjoy.
Notes
- Do not overmix the dough to keep the marble effect visible.
- Chill the dough briefly if the kitchen is warm.
- Slightly underbake for extra soft centers.
- Store cookies in an airtight container for up to 5 days.
