Ingredients
Scale
- 2 sheets puff pastry, thawed but still cold
- 3 medium apples, peeled and diced
- 1/3 cup granulated sugar
- 2 tablespoons brown sugar
- 2 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1/8 teaspoon salt
- 4 ounces cream cheese, softened
- 3 tablespoons powdered sugar, for the cream filling
- 1/2 cup powdered sugar, for the glaze
- 1 teaspoon vanilla extract, divided
- 1 large egg, beaten
- 1 to 2 tablespoons milk
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a skillet over medium heat, combine diced apples, granulated sugar, brown sugar, butter, cinnamon, lemon juice, and salt.
- Cook for 5 to 7 minutes, stirring often, until the apples soften.
- Mix cornstarch and water in a small bowl, then stir it into the apple mixture.
- Cook for 1 minute until thickened, then remove from heat and cool completely.
- In a separate bowl, mix cream cheese, 3 tablespoons powdered sugar, and 1/2 teaspoon vanilla extract until smooth.
- Cut the puff pastry into 8 squares.
- Add a spoonful of cream filling to each square if using, then top with apple filling.
- Fold each square into a triangle and press the edges firmly with a fork.
- Brush the tops with beaten egg and cut a small slit in each turnover.
- Bake for 18 to 22 minutes, until puffed and golden brown.
- Mix 1/2 cup powdered sugar, 1 to 2 tablespoons milk, and 1/2 teaspoon vanilla extract until smooth.
- Drizzle the glaze over slightly cooled turnovers and serve.
Notes
- Keep puff pastry cold for the flakiest texture.
- Cool the apple filling before assembling to prevent soggy pastry.
- Skip the cream filling for a classic apple-only version.
- Reheat leftovers in the oven for the best crisp texture.
