Description

Ingredients

  • 3 ripe bananas, mashed
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup rolled oats (for topping)
  • 2 tablespoons melted butter (for topping)
  • 2 tablespoons brown sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, mash the bananas. Stir in melted butter, yogurt, eggs, sugars, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet mixture until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Mix oats, melted butter, and brown sugar in a small bowl. Sprinkle evenly over the batter.
  6. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if the topping starts to brown too quickly.
  7. Cool in the pan for 10 minutes, then lift out and place on a wire rack to cool completely before slicing.

Notes

  • Use very ripe bananas with lots of brown spots for maximum flavor.
  • Do not overmix the batter to keep the loaf soft and tender.
  • Store tightly wrapped at room temperature or refrigerate for up to a week.
  • Freezes well — wrap individual slices for grab-and-go snacks.
