Description

This BBQ Chicken Rice Bowl is loaded with smoky barbecue chicken, fluffy rice, black beans, roasted corn, creamy avocado, and fresh vegetables for a colorful and satisfying meal that is perfect for busy weeknights or easy meal prep lunches.

  • 1 ½ pounds boneless skinless chicken thighs
  • 1 cup barbecue sauce
  • 3 cups cooked white rice
  • 1 cup roasted corn kernels
  • 1 cup canned black beans, drained and rinsed
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups shredded lettuce
  • 2 green onions, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Heat a large skillet over medium heat and prepare the rice if not already cooked.
  2. Season the chicken thighs with garlic powder, smoked paprika, salt, and black pepper.
  3. Add olive oil to the skillet and cook the chicken for 5 to 6 minutes per side until fully cooked and lightly charred.
  4. Pour the barbecue sauce over the chicken and coat evenly.
  5. Simmer for 2 to 3 minutes until the sauce becomes glossy and slightly thickened.
  6. Slice the chicken into strips.
  7. Fill serving bowls with warm rice.
  8. Top with barbecue chicken, black beans, roasted corn, shredded lettuce, cherry tomatoes, avocado, and green onions.
