Description

A hearty and healthy meal featuring savory black bean burgers served over a bed of rice and veggies. Customizable, rich in fiber and plant protein!


Ingredients

Scale
  • 1 can black beans (15 oz), drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 onion, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 tablespoon flaxseed meal (optional)
  • 2 cups cooked brown rice
  • 1 avocado, diced
  • 1 tomato, diced
  • 1/4 cup shredded lettuce
  • Salsa and/or yogurt for serving

Instructions

  1. In a bowl, mash black beans with a fork or potato masher.
  2. Add diced onion, breadcrumbs, chili powder, cumin, garlic powder, and flaxseed meal. Mix well.
  3. Form mixture into small patties.
  4. Heat a nonstick skillet over medium heat. Cook patties for 3-4 minutes on each side until crispy.
  5. To serve, spoon brown rice into a bowl, add black bean patty on top, and layer diced avocado, tomato, lettuce, and salsa or yogurt.

Notes

  • Add sweet potato or peppers for additional veggies.
  • Top with shredded cheese or avocado crema if you wish.
  • Gluten-free breadcrumbs can be used for a gluten-free meal.
