Description
A hearty and healthy meal featuring savory black bean burgers served over a bed of rice and veggies. Customizable, rich in fiber and plant protein!
Ingredients

- 1 can black beans (15 oz), drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 onion, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1 tablespoon flaxseed meal (optional)
- 2 cups cooked brown rice
- 1 avocado, diced
- 1 tomato, diced
- 1/4 cup shredded lettuce
- Salsa and/or yogurt for serving
Instructions
- In a bowl, mash black beans with a fork or potato masher.
- Add diced onion, breadcrumbs, chili powder, cumin, garlic powder, and flaxseed meal. Mix well.
- Form mixture into small patties.
- Heat a nonstick skillet over medium heat. Cook patties for 3-4 minutes on each side until crispy.
- To serve, spoon brown rice into a bowl, add black bean patty on top, and layer diced avocado, tomato, lettuce, and salsa or yogurt.
Notes
- Add sweet potato or peppers for additional veggies.
- Top with shredded cheese or avocado crema if you wish.
- Gluten-free breadcrumbs can be used for a gluten-free meal.
