Description

Creamy blueberry swirl cheesecake with a buttery graham cracker crust and vibrant blueberry ribbons baked into every silky bite. This rich and smooth dessert is perfect for celebrations, holidays, or whenever you want an elegant homemade treat.

Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated sugar, divided
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 24 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 tablespoon cornstarch

Instructions

  1. Preheat oven to 325°F and lightly grease a 9-inch springform pan.
  2. Mix graham cracker crumbs with melted butter until evenly combined. Press firmly into the bottom of the prepared pan.
  3. In a saucepan, combine blueberries, 1/4 cup granulated sugar, lemon juice, and cornstarch. Cook over medium heat until thickened, then allow to cool slightly.
  4. In a large mixing bowl, beat cream cheese with the remaining sugar until smooth and creamy.
  5. Add sour cream and vanilla extract, mixing until fully combined.
  6. Add eggs one at a time, mixing gently after each addition.
  7. Pour cheesecake batter over the crust.
  8. Spoon blueberry mixture over the batter and gently swirl with a knife to create a marbled pattern.
  9. Bake for 55 minutes, until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.
  11. Refrigerate for at least 6 hours or overnight before slicing and serving.

Notes

  • Use room temperature cream cheese for the smoothest texture.
  • Do not overmix the batter after adding eggs to help prevent cracks.
  • Frozen blueberries may be used without thawing.
  • For clean slices, wipe the knife between each cut.
