- 1 pound raw shrimp, peeled and deveined
- 8 ounces fettuccine pasta
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons chopped parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook the fettuccine until al dente, then drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil and butter over medium heat. Add shrimp and season with Cajun seasoning. Cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- In the same skillet, sauté minced garlic for 30 seconds until fragrant.
- Add the heavy cream and bring to a gentle simmer. Stir in the grated parmesan cheese until fully melted and smooth.
- Add the cooked pasta and reserved pasta water to the sauce. Toss to coat the pasta evenly.
- Return the shrimp to the skillet and gently mix into the pasta and sauce.
- Season with salt and freshly ground black pepper to taste. Sprinkle chopped parsley over the top before serving.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Don’t overcook the shrimp — they should be just pink and slightly curled.
- Reserve pasta water to adjust the sauce consistency as needed.
