Description
A warm and cheesy comfort food casserole loaded with seasoned ground beef, crispy potato bites, creamy sauce, and melted cheddar cheese baked until golden and bubbly.
Ingredients
Scale
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (10.5 ounces) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 bag (32 ounces) frozen potato bites
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 baking dish.
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease if needed.
- Stir in garlic powder, salt, black pepper, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese until combined.
- Spread the beef mixture evenly into the prepared baking dish.
- Arrange the frozen potato bites in an even layer over the beef mixture.
- Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
- Bake uncovered for 40 to 45 minutes until the potatoes are crispy and golden and the casserole is bubbling around the edges.
- Remove from the oven and sprinkle chopped parsley over the top before serving.
Notes
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- Allow the casserole to rest for 5 minutes before serving for easier slicing.
- For extra crispiness, bake an additional few minutes at the end.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
