Description

A warm and cheesy comfort food casserole loaded with seasoned ground beef, crispy potato bites, creamy sauce, and melted cheddar cheese baked until golden and bubbly.


Ingredients

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (32 ounces) frozen potato bites
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess grease if needed.
  3. Stir in garlic powder, salt, black pepper, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese until combined.
  4. Spread the beef mixture evenly into the prepared baking dish.
  5. Arrange the frozen potato bites in an even layer over the beef mixture.
  6. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  7. Bake uncovered for 40 to 45 minutes until the potatoes are crispy and golden and the casserole is bubbling around the edges.
  8. Remove from the oven and sprinkle chopped parsley over the top before serving.

Notes

  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • Allow the casserole to rest for 5 minutes before serving for easier slicing.
  • For extra crispiness, bake an additional few minutes at the end.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
