- 4 medium boneless, skinless chicken breasts
- 3 medium bell peppers (red, yellow, green), thinly sliced
- 1 large onion, sliced into strips
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss sliced peppers and onion with olive oil, chili powder, paprika, garlic powder, cumin, salt, and black pepper.
- Lightly grease a 9×13 baking dish.
- Place chicken breasts in the dish, scatter seasoned veggies around them, and top with both cheeses.
- Bake for 25–30 minutes, or until chicken reaches 165°F (74°C).
- Garnish with cilantro and a squeeze of lime juice before serving.
