- 4 large boneless, skinless chicken breasts
- 1 pack (150g) Boursin Garlic and Herb cheese
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- ½ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- Olive oil or cooking spray, for brushing
- Fresh parsley, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper or lightly grease it.
- Set up a breading station with flour in one bowl (seasoned with salt and pepper), eggs in another, and breadcrumbs in a third.
- Butterfly each chicken breast and place a spoonful of Boursin cheese in the center. Fold the chicken over and press to seal the edges.
- Coat the chicken in flour, then dip in egg, and finish with breadcrumbs. Repeat for all pieces.
- Place the chicken in the prepared baking dish. Brush lightly with oil or spray with cooking spray.
- Bake for 25–30 minutes, until golden brown and fully cooked through.
- Let rest for 5 minutes before serving. Garnish with parsley if desired.

- Freeze stuffed chicken briefly before breading to help it hold shape.
- Toast breadcrumbs for extra crunch and deeper flavor.
- Reheat leftovers in the oven to retain crispiness.
- Add a sprinkle of lemon zest to the breadcrumbs for brightness.
