A comforting one-pan dish of tender chicken thighs nestled in fluffy, buttery rice with sweet caramelized onions and warm spices. Rich, satisfying, and perfect for any night of the week.

- 4 bone-in, skin-on chicken thighs
- 1 cup basmati rice
- 2 large yellow onions, thinly sliced
- 3 tablespoons unsalted butter
- 1 tablespoon olive oil
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 3 garlic cloves, minced
- 1 bay leaf
Instructions
- Heat a large skillet over medium heat and add olive oil and 1 tablespoon of butter.
- Add sliced onions and cook for 12–15 minutes, stirring occasionally, until deeply golden and caramelized.
- Push onions to the side. Season chicken with salt, pepper, and cumin. Sear chicken skin-side down for 5 minutes per side until browned. Remove and set aside.
- Add minced garlic to the onions. Stir in rinsed rice, bay leaf, and remaining 2 tablespoons of butter. Mix well to coat rice in flavor.
- Place the chicken back in the pan over the rice. Pour in the chicken broth and bring to a simmer.
- Cover, reduce heat to low, and cook for 18–20 minutes until rice is tender and broth is absorbed.
- Remove from heat and let rest for 5 minutes. Fluff rice and serve hot.
Notes
- For extra flavor, warm the broth before adding it to the pan.
- Rinsing the rice well prevents it from getting sticky.
- Letting the dish rest before serving improves texture and flavor absorption.
