Description

A buttery, flaky croissant filled with creamy chicken salad, crisp celery, sweet grapes, fresh lettuce, and a bright touch of lemon.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/2 cup finely diced celery
  • 1/2 cup red grapes, halved
  • 2 tablespoons finely diced red onion
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large butter croissants
  • 4 green leaf lettuce leaves

Instructions

  1. In a medium mixing bowl, stir together mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  2. Add cooked shredded chicken, diced celery, halved grapes, red onion, and parsley.
  3. Fold gently until the filling is creamy and evenly mixed.
  4. Chill the filling for 15 minutes if time allows.
  5. Slice each croissant in half horizontally without crushing it.
  6. Place one lettuce leaf on the bottom half of each croissant.
  7. Spoon about 1/2 cup of chicken salad filling over each lettuce leaf.
  8. Add the top half of each croissant and press gently.
  9. Serve immediately while the croissants are flaky and the filling is cool.

Notes

  • Assemble close to serving time to keep the croissants from getting soggy.
  • Use rotisserie chicken for the quickest prep.
  • Pat lettuce dry before adding it to the croissants.
  • Taste the filling after chilling and adjust salt or lemon if needed.
