- 2 cups cooked shredded chicken
- 1/2 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 cup finely diced celery
- 1/2 cup red grapes, halved
- 2 tablespoons finely diced red onion
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large butter croissants
- 4 green leaf lettuce leaves
Instructions
- In a medium mixing bowl, stir together mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
- Add cooked shredded chicken, diced celery, halved grapes, red onion, and parsley.
- Fold gently until the filling is creamy and evenly mixed.
- Chill the filling for 15 minutes if time allows.
- Slice each croissant in half horizontally without crushing it.
- Place one lettuce leaf on the bottom half of each croissant.
- Spoon about 1/2 cup of chicken salad filling over each lettuce leaf.
- Add the top half of each croissant and press gently.
- Serve immediately while the croissants are flaky and the filling is cool.
Notes
- Assemble close to serving time to keep the croissants from getting soggy.
- Use rotisserie chicken for the quickest prep.
- Pat lettuce dry before adding it to the croissants.
- Taste the filling after chilling and adjust salt or lemon if needed.
