Description

A rich and creamy cheesecake layered with chocolate swirls and sweet strawberry ribbons over a crunchy chocolate cookie crust. This dessert is smooth, indulgent, and perfect for celebrations or cozy weekends at home.


Ingredients

  • 2 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 6 ounces semi sweet chocolate, melted
  • 1 1/2 cups fresh strawberries, chopped
  • 1/3 cup strawberry jam
  • 1 tablespoon cornstarch
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 325°F and lightly grease a 9 inch springform pan.
  2. Mix chocolate cookie crumbs with melted butter until evenly combined. Press firmly into the bottom of the pan to form the crust.
  3. In a saucepan, combine chopped strawberries, strawberry jam, and cornstarch. Cook over medium heat for 5 minutes until slightly thickened. Let cool.
  4. Beat cream cheese and sugar until smooth. Add sour cream and vanilla extract, then mix in eggs one at a time.
  5. Divide the cheesecake filling into two bowls. Stir melted chocolate mixed with heavy cream into one bowl.
  6. Pour alternating spoonfuls of vanilla and chocolate filling over the crust. Add spoonfuls of strawberry sauce and swirl gently with a knife.
  7. Bake for 55 minutes until edges are set and the center slightly jiggles.
  8. Turn off oven and leave cheesecake inside with the door slightly open for 1 hour.
  9. Refrigerate for at least 6 hours or overnight.
  10. Top with fresh strawberries and chocolate curls before serving.

  • Use room temperature cream cheese for the smoothest filling.
  • Do not overmix after adding eggs to help prevent cracks.
