- 800 grams beef chuck, cut into chunks
- 3 medium carrots, sliced
- 3 medium potatoes, chopped
- 2 stalks celery, chopped
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 2 tablespoons flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon thyme
- 2 bay leaves
Instructions
- Heat a large pot or Dutch oven over medium heat.
- Toss the beef chunks with salt, pepper, and flour until lightly coated.
- Add olive oil to the pot and brown the beef on all sides, then remove and set aside.
- In the same pot, sauté onion, garlic, celery, and carrots until softened, then stir in tomato paste.
- Return the beef to the pot, add potatoes, beef broth, thyme, and bay leaves.
- Bring to a gentle simmer and cook for 1 hour 30 minutes until beef is tender.
- Remove bay leaves and adjust seasoning if needed.
- Serve warm and enjoy.
