- 3 large eggs
- 1/2 cup cottage cheese, blended smooth
- 2 tablespoons unflavored protein powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine salt
- 1/4 teaspoon garlic powder, optional
- 1/8 teaspoon black pepper, optional
Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- Add the eggs, cottage cheese, protein powder, baking powder, salt, garlic powder, and black pepper to a blender.
- Blend until the mixture is completely smooth and creamy.
- Spoon the batter into 8 small rounds on the prepared baking sheet, leaving space between each one.
- Bake for 22 minutes, or until puffed, set, and lightly golden on top.
- Let the rounds rest on the baking sheet for 5 minutes before lifting.
- Serve warm or cooled with your favorite light topping.
Notes
- Blend the cottage cheese well for the smoothest texture.
- Do not overbake, or the rounds may become dry.
- For a sweeter version, skip the garlic powder and black pepper, then add cinnamon and vanilla.
- Store leftovers in an airtight container in the fridge for up to 3 days.
