Description

A light, fluffy, high protein cloud bread snack made with eggs, cottage cheese, and protein powder. Soft in the center, lightly golden on the edges, and perfect for sweet or savory toppings.


Ingredients

  • 3 large eggs
  • 1/2 cup cottage cheese, blended smooth
  • 2 tablespoons unflavored protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon garlic powder, optional
  • 1/8 teaspoon black pepper, optional

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Add the eggs, cottage cheese, protein powder, baking powder, salt, garlic powder, and black pepper to a blender.
  3. Blend until the mixture is completely smooth and creamy.
  4. Spoon the batter into 8 small rounds on the prepared baking sheet, leaving space between each one.
  5. Bake for 22 minutes, or until puffed, set, and lightly golden on top.
  6. Let the rounds rest on the baking sheet for 5 minutes before lifting.
  7. Serve warm or cooled with your favorite light topping.

Notes

  • Blend the cottage cheese well for the smoothest texture.
  • Do not overbake, or the rounds may become dry.
  • For a sweeter version, skip the garlic powder and black pepper, then add cinnamon and vanilla.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
