Description

These colorful chicken veggie rice wraps are packed with seasoned chicken, fluffy rice, crisp vegetables, and creamy hummus for a fresh and satisfying lunch or dinner.


Ingredients

  • 1 pound boneless, skinless chicken, sliced into strips
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 1/2 cups cooked rice
  • 1 tablespoon lemon juice
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup cucumber, cut into thin matchsticks
  • 1 cup red bell pepper, thinly sliced
  • 1 cup yellow bell pepper, thinly sliced
  • 1 cup romaine lettuce, shredded
  • 1/3 cup hummus
  • 4 large flour tortillas

Instructions

  1. Heat a large skillet over medium heat. Warm the cooked rice if needed.
  2. In a small bowl, toss the cooked rice with lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Season the chicken with olive oil, garlic powder, smoked paprika, 1/2 teaspoon salt, and the remaining 1/4 teaspoon black pepper.
  4. Cook the chicken in the hot skillet for 4 to 5 minutes, stirring occasionally, until cooked through and lightly golden. Let it rest for 2 minutes.
  5. Warm the tortillas briefly so they are flexible.
  6. Spread about 1 tablespoon plus 1 teaspoon hummus over each tortilla.
  7. Divide the rice, chicken, cabbage, carrots, cucumber, red bell pepper, yellow bell pepper, and romaine among the tortillas.
  8. Fold in the sides and roll each tortilla tightly into a wrap.
  9. For a lightly toasted finish, place each wrap seam-side down in the skillet over low heat for 1 minute per side.
  10. Slice in half and serve immediately.

Notes

  • Pat the vegetables dry before assembling to keep the wraps from getting soggy.
  • Do not overfill the tortillas or they will be harder to roll neatly.
  • You can prep the chicken, rice, and vegetables ahead of time and assemble just before serving.
  • Extra hummus makes a great dipping sauce on the side.
