Description

  • 6 boneless skinless chicken thighs
  • 1 1/2 cups long grain white rice
  • 1 large yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 tablespoons all purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken thighs with salt, black pepper, paprika, and dried thyme.
  2. Heat olive oil and butter in a large skillet or Dutch oven over medium heat.
  3. Sear the chicken thighs for 4 to 5 minutes per side until golden brown. Remove and set aside.
  4. Add the sliced onions to the skillet and cook until soft and lightly caramelized. Stir in the minced garlic.
  5. Sprinkle the flour over the onions and stir for 1 minute.
  6. Slowly pour in the chicken broth while stirring until a smooth gravy forms.
  7. Stir in the heavy cream and add the rice.
  8. Return the chicken thighs to the skillet, nestling them into the rice mixture.
  9. Cover tightly and simmer on low heat for 25 to 30 minutes until the rice is tender and the chicken is fully cooked.
  10. Sprinkle fresh parsley over the top, let rest for 5 minutes, then serve warm.
