Description

A creamy, comforting coconut curry soup filled with tender dumplings, fresh vegetables, and rich aromatic flavors that come together in one cozy bowl.


Ingredients

  • 400 ml coconut milk
  • 3 cups vegetable broth
  • 2 tablespoons curry paste
  • 20 dumpling wrappers
  • about 20 raw vegetable-filled dumplings
  • 2 medium carrots, sliced
  • 2 cups bok choy, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 lime, cut into halves
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Place a large pot over medium heat and allow it to warm gently.
  2. Add a small amount of oil, then sauté minced garlic and grated ginger until fragrant. Stir in curry paste and cook briefly to release flavor.
  3. Pour in vegetable broth and coconut milk, stirring until smooth and well combined.
  4. Add sliced carrots and let them soften slightly, then gently place dumplings into the broth.
  5. Simmer for 8 to 10 minutes until dumplings are cooked through and tender.
  6. Add chopped bok choy and soy sauce, cook for another 2 minutes, then squeeze in fresh lime juice.
  7. Ladle into bowls, garnish with fresh cilantro, and serve warm.

Notes

  • Keep the heat gentle after adding dumplings to prevent breaking.
  • Taste and adjust seasoning before serving.
  • Add extra broth if the soup becomes too thick.
