- 2 pounds turkey breast, cut into bite-sized pieces
- 12 ounces whole mushrooms, sliced
- 4 medium Yukon Gold potatoes, thinly sliced
- 2 cups shredded mozzarella cheese
- 1 1/2 cups heavy cream
- 1 cup chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 baking dish.
- In a large skillet over medium heat, melt butter with olive oil. Add diced onion and cook until softened.
- Stir in garlic and sliced mushrooms. Cook until mushrooms release moisture and become golden.
- Add turkey pieces, salt, black pepper, and paprika. Cook until turkey is lightly browned.
- Arrange half of the sliced potatoes in the prepared baking dish.
- Spoon the turkey and mushroom mixture over the potatoes.
- Pour chicken broth and heavy cream evenly over the casserole.
- Sprinkle 1 cup mozzarella cheese over the filling.
- Layer remaining potato slices on top and finish with remaining mozzarella cheese.
- Cover with foil and bake for 40 minutes.
- Remove foil and bake an additional 20 minutes until potatoes are tender and top is golden.
- Let casserole rest for 10 minutes before serving.
- Garnish with fresh parsley and serve warm.
