Description

A hearty sweet-and-savory sandwich made with crispy fried chicken, melted cheddar cheese, golden Belgian waffles, maple mayo, and dill pickles.

  • 1 pound chicken tenders
  • 1 cup buttermilk
  • 1 teaspoon hot sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups vegetable oil, for frying
  • 8 frozen Belgian waffles
  • 4 slices cheddar cheese
  • 1/4 cup mayonnaise
  • 3 tablespoons maple syrup, divided
  • 8 dill pickle slices
  • 2 tablespoons butter, melted

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat until it reaches about 350°F. Preheat a toaster or oven for the waffles.
  2. In one bowl, combine the chicken tenders, buttermilk, hot sauce, salt, and black pepper.
  3. In a second bowl, mix the flour, panko breadcrumbs, paprika, garlic powder, and onion powder.
  4. In a small bowl, stir together the mayonnaise and 1 tablespoon of the maple syrup.
  5. Remove each piece of chicken from the marinade and coat thoroughly in the breadcrumb mixture, pressing gently so the coating sticks.
  6. Fry the chicken for 4 to 5 minutes per side, until golden, crisp, and cooked through. Transfer to a wire rack or paper towel lined plate.
  7. Immediately top each hot piece of chicken with a slice of cheddar cheese so it melts.
  8. Toast the waffles until golden, then brush lightly with the melted butter.
  9. Spread the maple mayo over 4 waffles. Top each with one cheesy chicken piece and 2 dill pickle slices.
  10. Drizzle with the remaining 2 tablespoons maple syrup, top with the remaining waffles, and serve immediately.

Notes

  • Toast the waffles well so they hold the fillings without getting soggy.
  • Do not overcrowd the skillet, or the chicken may lose its crisp texture.
  • For extra heat, add a little more hot sauce to the mayo.
  • Serve right away for the best balance of crisp, melty, and warm textures.
