A hearty sweet-and-savory sandwich made with crispy fried chicken, melted cheddar cheese, golden Belgian waffles, maple mayo, and dill pickles.

- 1 cup buttermilk
- 1 teaspoon hot sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 cups vegetable oil, for frying
- 8 frozen Belgian waffles
- 4 slices cheddar cheese
- 1/4 cup mayonnaise
- 3 tablespoons maple syrup, divided
- 8 dill pickle slices
- 2 tablespoons butter, melted
Instructions
- Heat the vegetable oil in a large skillet over medium heat until it reaches about 350°F. Preheat a toaster or oven for the waffles.
- In one bowl, combine the chicken tenders, buttermilk, hot sauce, salt, and black pepper.
- In a second bowl, mix the flour, panko breadcrumbs, paprika, garlic powder, and onion powder.
- In a small bowl, stir together the mayonnaise and 1 tablespoon of the maple syrup.
- Remove each piece of chicken from the marinade and coat thoroughly in the breadcrumb mixture, pressing gently so the coating sticks.
- Fry the chicken for 4 to 5 minutes per side, until golden, crisp, and cooked through. Transfer to a wire rack or paper towel lined plate.
- Immediately top each hot piece of chicken with a slice of cheddar cheese so it melts.
- Toast the waffles until golden, then brush lightly with the melted butter.
- Spread the maple mayo over 4 waffles. Top each with one cheesy chicken piece and 2 dill pickle slices.
- Drizzle with the remaining 2 tablespoons maple syrup, top with the remaining waffles, and serve immediately.
Notes
- Toast the waffles well so they hold the fillings without getting soggy.
- Do not overcrowd the skillet, or the chicken may lose its crisp texture.
- For extra heat, add a little more hot sauce to the mayo.
- Serve right away for the best balance of crisp, melty, and warm textures.
