Description

Ingredients

  • 2 large boneless skinless chicken breasts, sliced in half horizontally
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups panko breadcrumbs
  • 3 tablespoons olive oil
  • 12 ounces fettuccine pasta
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • 2 cups heavy cream
  • 1 1/2 cups freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and heat a large skillet over medium heat.
  2. Season the chicken with salt, black pepper, garlic powder, and paprika.
  3. Place flour in one bowl, beaten eggs in another bowl, and panko breadcrumbs in a third bowl.
  4. Coat each chicken piece in flour, then egg, then breadcrumbs.
  5. Add olive oil to the skillet and fry the chicken for 4 to 5 minutes per side until golden brown and fully cooked.
  6. Transfer the cooked chicken to a paper towel-lined plate.
  7. Cook the fettuccine pasta until al dente according to package instructions.
  8. In the same skillet, melt butter and sauté minced garlic for 30 seconds.
  9. Pour in heavy cream and stir gently over low heat.
  10. Add parmesan cheese and Italian seasoning, whisking until smooth and creamy.
  11. Toss the cooked pasta into the sauce until evenly coated.
  12. Slice the crispy chicken and place it over the creamy pasta.
  13. Garnish with chopped parsley and extra parmesan before serving.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Do not overcrowd the skillet while frying the chicken.
  • Add a splash of pasta water if the sauce becomes too thick.
