Description

Ingredients

  • 3 cups cooked rotini pasta
  • 1 cup sliced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/2 cup sliced black olives
  • 3/4 cup cubed feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the rotini pasta until tender, then drain and let it cool completely.
  3. In a large mixing bowl, add the cooled pasta.
  4. Add cucumber, cherry tomatoes, red onion, black olives, and feta cheese to the bowl.
  5. In a small bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, salt, and black pepper.
  6. Pour the dressing over the salad and toss gently to combine.
